I have an odd question about controller setup. Me and my friend love to play RPGs together, there's not alot of multiplayer RPGs but the SNES emulator fixed that because there's a setting that allows you to use two separate controllers to control player 1 at the same time. That way we can each pick our favorite character and control them in turn based combat without having to pass the controller back and forth. I'd like to know if there's a similar way to accomplish this in the PSX emulator. Alot of great RPGs we're missing out on, would sure appreciate some help, thank you.

pSX does have Separate Keyboard and Joypad controls for each controller so you can use Joy2Key or Xpadder for the secondary controls via Key assignments. You will loose Analog controls for the secondary controller, but it's better than nothing.
Edit: Final Fantasy IX has multipayer support about the same way as you explained in your post. I'm not sure if there are others that have such a thing.
