Check your disc for scratches and try running the game from an image.
Also, and this might get me into a little trouble with the purists.. try running it in ePSXe. This is one of those very rare games that is greatly improved by increasing the resolution.

This is why I told you to try running it from an image. It's one of those quirk points between PS1 hardware and PC hardware. PC drives don't like doing constant speed rotation, they seem to prefer burst transfers.
I'll be a little more specific, though. I only suggest ePSXe if you're planning to increase the resolution. If not, I'd stick to pSX using an image.

Hmm. At which level were you getting errors?
Unfortunately, I got rid of my original CD at some point, but I'm playing the game right now with an image, and although it's only the first level, my copy of the game was rather scratched as well - I got read errors when I had created my ccd/img/sub image.
But it is playing flawlessly for me with the image in v1.13.
If this is considered a PC drive issue, and not pSX, then I'll include a note to say as much that image play is preferred.

I've completely finished the game several times on pSX in the past, so it's not an emulator issue itself.
It's either the disc or the drive, which is why you check for scratches and then image it. If you've got scratches, well, there's no assurance the game'll work as intended but it might be okay. If not, the image part takes your drive out of the equation. As I said previously, a lot of PC drives have problems with PSX games. It could be a combination of both, too-- a drive that doesn't like the read patterns the PSX emulation is using and a disc that's getting read errors.
I don't think the compatibility list needs an update for Einhander based on this. This isn't anything inherent to the game itself, it can and does affect all games on various drives.
