Sune's Soundblaster X-Fi Xtrememusic is probably a very low latency soundcard, jerry. AIR the default latency values for Windows are 20ms for both sliders; in Linux it's 32ms for the Latency slider and 20ms for the XA latency one.
One of the nice things about pSX is that you can always reset your configuration back to default by deleting your psx.ini file - that's the configuration file: if you delete it, pSX will create a default one next time you start it. Because pSX is so easy to configure, it's no pain to do this.
Edit: the best speed for ripping is generally about 1/2 the maximum read speed of your drive; also, it's best to use an -RW drive for ripping rather than a -ROM one, as -RW drives usually read non-standard formats better.
