I'm wondering if the resolution of the pSX is the same of the console. I really don't remember how an original PSX was, because I don't play on it for 8 years !!!

Yep - its the same, except that the output is always stretched (with bilinear) to a 640x480 display.

Will there be possible changes to the resolution eventually? (Example: 800x600 display)

i think it should be, since there's some command line's switches related to video mode (-m800,600,32 for 800x600 at 32bit depth) but they don't seem effective.
but since the goal of the emu is to provide the best possible real psx feeling, 640x480 is the recommended setting.
if you want to play at higher rez, consider using ePSXe.
anyway, about what the PS1 was capable of : - resolution from 256x224 (most games) to 640x480 (very rare, mostly used for fixed screen), at 16,4 M colors (24bit output)
