Randomly during battles the sound start looping for a few second than the entire emulator crash and shutdown. Emulator versions: 1.12-1.13 both windows (XP sp2) and Linux (Ubuntu 7.10) Bios version: SCPH7502.BIN GAME ID: SLES 02083 (PAL-ITA) Using a cdz made from a ccd directly ripped from my original disc. Have you tried using a different BIOS?

I've just tried with the 1001 bios and it SEEMS to work (I'm not sure because the freeze is casual), I haven't tried with the original CD-rom because pSX can't read subtracks with my drive so the copy protection stop me.

Well, if you come across the crash again, let us know. SCPH-7502 has been known to not be the *greatest* BIOS to use, and while it usually wouldn't cause a seemingly random crash, it can't be ruled out.
If you do come across it again, try decompressing the .cdz. Or see if it can be replicated (keep a savestate slot to save in before each battle, and see if reloading it causes a crash in the same exact spot when reloaded).

Just for curiosity what is the bios with the higher compatibility?

Oldest is best, usually. SCPH-1002, DTLH-1002, DTLH-3002... those are generally the best ones (obviously, SCPH-1002 is by far the easiest of those to find). It's rather odd, since usually newer BIOS images would be the better ones, but the oldest ones seem to be the most compatible with PS1 emulators.
Those are just the PAL region ones of course. The recommended BIOS overall is most certainly SCPH-1001. For some emulators, that's the only one that they'll even support (either ePSXe or AdriPSX used to be like that).
